Sausage & Peppers

Grandma Moe's Original Recipe



  1. Slice peppers and onions into 1/4 to 1/2 inch strips
  2. Place peppers and onions into baking tin
  3. Sprinkle with salt, pepper, parsley, oregano, and red pepper
  4. Add olive oil and mix (peppers should be lubricated, but not too oily)
  5. Place in oven at 350 degrees and cook for 30 to 45 minutes until slightly soft
  6. Check peppers and onions every 10 minutes; add oil if burning
  7. Bring pan of water to boil (water should be 1/2 sausage-width deep)
  8. Lower flame to medium and cook sausage fully (about 16 minutes)
  9. Turn sausage regularly and poke with fork
  10. Slice sausage diagonally into bit sized chunks (but not too small)
  11. Add sausage to peppers and onions and bake for 10 minutes at 350 degrees
