Cutlets Parmagiana
(Veal, Chicken, or Eggplant)
Grandma Moe's Original Recipe



  1. Dry (soak eggplant for 1/2 hr in water first)
  2. Dip in egg and dredge in breadcrumb.
  3. Put vegetable oil in pan and fry cutlets.
  4. Let cutlets drain on paper towels.


  1. Brown sliced garlic in pan with olive oil.
  2. Pour in sauce.
  3. Add condiments.
  4. Simmer covered for 10 minutes.


  1. Put some sauce on the bottom of a bake dish.
  2. Put in cutlets (veal or chicken).
  3. Poor rest of sauce on top.
  4. Sprinkle on grated cheese.
  5. Put on mozerella.
  6. Bake @ 350F for 10-15 minutes.
